Nasi Uduk Komplit (Indonesian Coconut steamed rice with the LOT)


This dish can be quite time consuming to prepare, but I promised you, it can impressed your guests! Nasi Uduk originally comes from Jakarta and is basically steaming rice with coconut cream and there are little side dishes to accompany the rice such as fried chicken, fried tofu, tempeh, egg (important), fried shallot, kecap manis or sweet soy sauce and many more!

Most of you probably have tried it before when visiting Indonesian restaurant. Now, you can save time travelling and make it yourself :)

Rice (Nasi)

  • 500g Jasmine Rice grain
  • 400g Coconut Cream
  • 1 Stalk of Lemongrass
  • 2 Pieces of dried Galangal
  • 5 Pieces of dried Bay leaves
  • 7-8g of Pandan leaves
  • 1.5 tsp salt
  • Enough water to make up normal rice
Method:
1. Wash the rice thoroughly
2. Cut up the lemongrass and smash the roots just to brings out the flavour in the steamer
3. Mix all ingredients together
4. Put it in rice cooker and let the magic happen :)





Side Dishes:

Tempe Oreg (Tempeh with sweet soy sauce)

  • 200 g Tempeh, cut to small pieces
  • 1 clove French Shallot
  • 2 cloves Garlic
  • 1- 2 Tbsp Sweet soy sauce ( I recommend Bango brand)
  • Tamarind paste (Dilute 1/2 Tbsp with 6 Tbsp water)
  • 1 Big red Chilli
  • 2 Small Chillies
  • Salt and Pepper to taste
Methods:
1. Soak the tempeh in salt water for about 30mins.
2. Drain the water and let it dry out before frying to ensure crispness
3. Fry the tempeh in batches till it's turn brown and crispy


4. Heat wok with 2 Tbsp oil
5. Fry the French shallot till abit brown and then put in the garlic and chillies


6. After 2-3 mins, put in the tempeh, toss until even
7. Seasoned with the tamarind water (remove the pulp), sweet soy sauce, salt and pepper
8. Mix well and turn down the heat, continue cooking for at least 3mins before tasting


Indonesian Fried Chicken (Tumeric base paste)
  • Full Chicken breast, diced.
  • 55g Bumbu Ayam Kuning sauce 
  • 100 ml Water
Methods:
1. Boil the chicken, the sauce and water until tender
2. Leave it overnight or atleast 30mins


3. Shallow fry the chicken until brown and crispy


Assembly!!
I have fried tofu, fried eggs, stinky beans, cucumber and sambal terasi or shrimp paste for the side dishes!
